Food under Focus were approached by a national chain of budget hotels that felt their food offer was inadequate for their chosen target market.


Working from a marketing brief Food Under Focus reviewed competitor menus with particular attention to content and pricing structure. Food Under Focus also reviewed available statistical information to identify menu product demand.

It was important that whatever was recommended was operationally sound and could be prepared to a high standard by staff who did not have a background in food preparation. Other factors to be taken into consideration were limited kitchen facilities and delivery frequencies..


A menu proposal was put forward taking all these factors into account which ensured guests who were staying at the Hotel ate at the Hotel as well as choosing the Hotel in the future because they were assured of an appetising but fairly priced meal.
